This 20 Minute White Chicken Chili is so yummy! Save for later!
1 onion, diced
1 tbsp. olive oil or neutral cooking oil
2 boxes (32 oz. each) chicken broth
2 cans (4 oz. each) diced green chili peppers
2 cans (15 oz. each) cannellini beans, drained and rinsed
2 cans (5 oz. each) chicken, drained
1 tbsp. cumin
1 tsp. oregano
1⁄2 tsp. garlic
1⁄2 tsp. salt
1 cup cooked rice
Shredded cheese, tortilla chips and sour cream
In large stockpot over medium-low heat, sauté onion in oil until softened, about 5 minutes.
Add broth, chiles, beans and chicken. Stir to combine. Bring to a boil; reduce heat and simmer.
Stir in cumin, oregano, garlic and salt. Simmer 10 minutes.
Divide rice evenly between bowls. Ladle soup over rice. Top with cheese, chips and sour cream. For a kid-friendly plate, try serving a scoop of rice with drained beans, chicken, cheese and chips on top. Refrigerate any leftovers.
