Ingredients 1 onion, diced 1 tbsp. olive oil or neutral cooking oil 2 boxes (32 oz. each) chicken broth 2 cans (4 oz. each) diced green chili peppers 2 cans (15 oz. each) cannellini beans, drained and rinsed 2 cans (5 oz. each) chicken, drained 1 tbsp. cumin 1 tsp. oregano 1⁄2 tsp. garlic 1⁄2 tsp. salt 1 cup cooked rice Shredded cheese, tortilla chips and sour cream Directions Step 1 In large stockpot over medium-low heat, sauté onion in oil until softened, about 5 minutes. Step 2 Add broth, chiles, beans and chicken. Stir to combine. Bring to a boil; reduce heat and simmer. Step 3 Stir in cumin, oregano, garlic and salt. Simmer 10 minutes. Step 4 Divide rice evenly between bowls. Ladle soup over rice. Top with cheese, chips and sour cream. For a kid-friendly plate, try serving a scoop of rice with drained beans, chicken, cheese and chips on top. Refrigerate any leftovers.
